Rainbow Cake

When it came to my birthday last year… I wanted the most colourful cake I could. I gathered my gel colours and set to work.

For the mix, I used my standard mix, with 3 eggs for each two layers, dividing it into two bowls, and colouring them separately.

I started with the bottom two, blue and indigo…

Then stacked them using a simple vanilla buttercream to sandwich them together…

Then I continued on, through green, yellow, orange and red, stacking them high until all were assembled…

Next I covered the whole thing in white fondant icing, and coloured the leftover fondant to make some letters (with backups of each just in case I broke one!)

Then arranged them on top of the cake….

We then spent my birthday weekend camping at my cousin’s place, trampolining, walking in the woods, cooking over campfires… oh and going to see awesome gigs! Happy times.

The hidden design of course being the Rainbow. This cake was a monster of a cake, similar to some of those baked in Week 1 of the show! However, this cake was baked to perfection, perhaps a little let down because I didn’t trim the cakes before crumb-coating and icing them, so the finished cake wasn’t that smooth. Alas. Next time.

    1. It really was huge! But I wanted those thick bands of vibrant colour… So alas, it was huge!

    Hello! I want to make one of these for my daughter’s birthday. Have found loads of different recipes but wonder whether it would work with a basic sponge and added food dye? Thank you for any advice you can give!

    1. Yep, that’s what I did. I just used my regular cake mix recipe, then divided it into two and added the colour. Hope this helps.
