It’s International Homemade Hobnob Celebration day tomorrow, and plans are afoot for a handout of free hobnobs to the people of bristol.
Free handouts require many hobnobs…
Butter, syrup and water… added to…
Oats, flour, sugar and bicarbonate of soda…..
Spoonfuls flattened on a tray….
= many tiers of hobnobs cooling….
However, I also decided to mix it up a little bit…. the basic recipe is here, but instead of the 225g of oats, I substituted 50g of chopped dried apricots, 10g of each of sunflower seeds, pumpkin seeds, sesame seeds, and linseeds (inspired by a recipe from the Vegetarian Student Cookbook) and 135g of oats.

Ready to bake…
Done! They taste nice, little bit of interest and different flavors from the apricots and seeds, but not really like hobnobs, they also spread more than hobnobs, which could be just due to the consistency of the mix. Definitely one to make again though.
Update: I decided to share a few in the mass hobnob handout and there were 100% positive comments. Awesome times.
