Today has been a day of craftiness! (or should that be craftyness?)
Two of my pregnant lady friends came round and we had a bit of a baby bib making session, using the same template as I have made before.
We kept going with supplies of tea and juice….. oh and I whipped up some of these beauties:
Cherry and White Chocolate Flapjack Recipe – modified from The Vegetarian Student Cookbook
Ingredients
125g butter or margarine
125g soft brown sugar
4 tbsp golden syrup
90g dried cherries
100g white chocolate chunks
225g rolled oats
50g self raising flour
Method
Heat the oven to 180C/350F.
Line the base and sides of a 20cm shallow square tin with baking paper (note: mine is more rectangular… but it really doesn’t matter!)
Melt the butter, sugar, and syrup in a pan, add to the flour, cherries, and oats, and mix well. Lastly, add the white chocolate chunks, and spoon the mixture into the prepared tin and press flat.
Bake for 20-25 minutes or until brown.
The white chocolate mainly adds a bit of flavour to the flapjack, as the chunks melt slightly as you mix them in and pack the mixture into the tin, so they are less of a chocolate chunk thing, and more a chocolate mouthfeel.
….the rest of the day was spent much less happily, tackling the mountain of random stuff we have accumulated in our house, and sorting paperwork.
