I love making biscuits. If the biscuits are cute… even better.
The first time I made this recipe, it was for a friend’s birthday. She isn’t a big cake fan, but she does like biscuits…. and Sausage Dogs. It was her 30th birthday too… so that deserves 30 little fellas all looking their best! P.S I got the cutter from here.

Rolled Chocolate Cookies Recipe
– taken from Cookie Craft Christmas/ Cookie Craft by Valerie Peterson and Janice Fryer
Ingredients
2 1/2 cups all-purpose flour (plain)
1/2 cup cocoa powder
1tsp espresso powder (optional)
1/2 tsp salt
1 cup (2 sticks or 225g) butter, softened
1 cup sugar
1 large egg
1 tsp vanilla extract
Method
Whisk together the flour, cocoa, espresso powder (if using), and salt in a medium bowl.
Cream together the butter and sugar until light and fluffy, add the egg and vanilla and mix until well blended.
Gradually add the flour mixture to the butter mixture until the two are thoroughly blended.
Turn the dough out onto a work surface and divide into two or three equal portions. Form each into a rough disc, then roll, chill and cut out shapes.
Preheat the oven to 350°F/ 180°C
After all the rolling and cutting is done, bake on lined trays for 12-16 minutes or until they start to turn a deeper brown around the edges (note: very difficult to tell – fine line between done and overdone!)
Cool, and then decorate if required!
