When you’ve had a long day, and are super tired having been called out to work in the middle of the night, you really need something quick, simple, easy, and tasty. And to be able to cheat massively while making it.
This was inspired by some smoked tofu I spotted while shopping on Saturday:
..and I decided to make some vegetable and tofu fried rice to satisfy that hunger.
Smoked Tofu and Vegetable Fried Rice Recipe
Feeds 4 (or more like 2 or 3 if Mr M is one of them)
Easy cook rice (I used a mixture of brown and white, and about 4 handfuls)
Some frozen mixed vegetables
1 onion, chopped
Lazy Garlic, Ginger, and Chillies (to taste, I used between 1/2tsp and a tsp)
Soy sauce (again, to taste, I used about a tablespoon)
2 eggs, beaten (optional)
Cook the rice according to instructions (it can vary between brown, white….)
A few minutes before the end of the cooking time, add the frozen vegetables.
Meanwhile, heat 2 tbsp of oil (I used sunflower, but you use whatever you like) in a large pan, and fry the onion for a few minutes, then adding the Lazy Garlic, Ginger, and Chillies. Cook for a few minutes more, and chop the tofu into 1 by 2cm chunks. Then add this to the pan and fry until golden.
Add the rice and vegetables, and season with a bit of soy sauce (you can add a bit of beaten egg too if you want some extra protein, but it’s optional). Fry for a few more minutes…. then done!
So there you go, the most complicated it got was chopping an onion. Some disapprove of frozen vegetables, but I think sometimes they are ok as a quick and easy way to get some vegetables in. I do appreciate the ease of use of the Lazy products, particularly for chillies as it results in much less accidentally rubbing your eyes issues!
Even better, I had some leftovers for my lunch today. Fabulous.
