Grandma K’s Lemon (and Vanilla) Cordial

One of my ultimate favourite summer drinks is homemade Elderflower cordial. It’s delicious. However, due to a mixture of hecticness, and the particularly rubbish weather we have been having lately, I haven’t had chance to go for a proper flower picking session.

Next best thing? My Grandma K’s Lemon Cordial. I make it two ways, original pure lemon, and with a twist inspired by the delicious Luscombe Sicilian Lemonade….. a little hint of Vanilla.

Grandma K’s Lemon (and Vanilla) Cordial Recipe

Ingredients

1 lemon

3lb sugar

2oz citric acid

4 pts water

1tsp vanilla extract (optional)

Method

Put the zest and juice of the lemon in a pan.

…add the water, and bring to the boil.

Remove from the heat and add the sugar and citric acid. Stir until all is dissolved. Add the vanilla extract if using.

Strain through fine mesh and decant into sterilised bottles.

Add a snazzy label!

Done! I love the hint of vanilla with the lemon.
