So, tonight was a “yeah, we really need to go shopping” kind of food night. You know, when you only have random bits and pieces in the cupboards?
On investigation, the fridge contained: mouldy broccoli; a red pepper; some sad looking spring onions; and some eggs.
Hmmm. Problematic.
What’s that Lion eggs advert? Fast food and good for you? Time to make something out of nothing! A simple variation on a classic breakfast/ brunch dish, but who say it can’t be dinner?
Cheese, Pea, Red Pepper and Garlic Scrambled Eggs Recipe
Ingredientsm– serves 2(ish)
garlic (lazy)
a red pepper – diced
olive oil
7 eggs
dash of milk
150g cheddar cheese, grated, plus a little extra to sprinkle on top
frozen peas (as many as you like)
Method
Heat the oil in a large frying pan.
Add the garlic and red pepper.
Meanwhile, cook the peas in a pan of boiling water.
Beat the eggs together with the milk and cheese, and pour over the top of the peppers and garlic. Keep stirring as it cooks. Add the peas. Take off the heat just before it is fully cooked.
Serve and sprinkle with the rest of the the cheese.
