Irish cooking. Full of potatoes right? Well this is a recipe to live up to stereotypes!
I went to Dublin the weekend before last, and if you go away, of course you have to bring stuff into work. However the joy of Ryanair baggage allowance meant that we didn’t actually bring anything back from Ireland, so I thought I would try something Irish!

Potato Apple Cake Recipe – taken from Cakes: Regional and Traditional by Julie Duff
Ingredients
225g/8oz self raising flour
1/2 tsp mixed spice
150g/5oz butter
115g/4oz soft brown sugar
115g/4oz cooked and mashed potato
2 large cooking apples, peeled, cored, and diced
2 eggs, lightly beaten
(milk if necessary)
Method
Preheat the oven to 180C/350F. Grease and line a 900g/2lb loaf tin.
Sift the flour and spice into a bowl, and rub in the butter until it resembles fine breadcrumbs (alternatively, I just used the food processor!)
Stir in the sugar and potatoes.
Stir in the apples, then the eggs and mix until it forms a soft dough.
(Sort of like batter coated apples)
Spoon into the prepared loaf tin and bake for 1 hour and 15 minutes, or until a skewer inserted into the middle comes out clean.
Remove and turn out onto a wire rack to cool.
Tasty!
It’s nice and moist, although I think my favourite apple cake is still the Westcountry Apple Cake for it’s crunchy topping!

It was quite moist, although ny favourite apple cake is still the Westcountry Apple Cake… Otherwise known around here as dry coated apples, as it really doesn’t look like it will make a cake!
