You know when you do too much mash? Or carrots? Or anything else…. and you put it in a tub in the fridge to use up… always with the best of intentions, but then you find it again 3 weeks later and it has some weird fungal growth going on? Well, before it gets to that stage, use it up!
I had some mashed potato leftover from something else I made today, so decided to do a bit of a bubble and squeak style thing. Only I didn’t have any leftover cabbage, so used carrots and peas instead… then went a bit mad and added a few extras.
Mashed potato, carrots, peas and some grated cheese.
Add a couple of beaten eggs, a sprinkle of smoked paprika, and stir.
Heat a nice big pan and grease with oil, then take scoopfuls of mixture…
Plop into the greased, heated pan and flatten slightly..
Cook for a few minutes, then flip over and cook on the other side….
…then done!
Yum.
I also tried those pesky Chelsea buns again, in a festive mixed spice/fruit type way, with the extra 40g of sugar that was missed out of the recipe. They are GOOOOOOD!
