Parsley Pinwheels

I was searching for some recipes for food to make for the Jubilee party and found these.

British butter? Check.

British Parsley? Check.

British bread? Done!

Parsley Pinwheels Recipe – taken from Rose Elliott’s New Complete Vegetarian

Ingredients

60g unsalted butter, softened
2tbsp parsley, finely chopped
1tsp hot water
5-6 slices bread, white or brown

Method

Blend the butter, parsley, and water together into a paste.

Cut the crusts off the slices of bread, and flatten slightly with a rolling pin.

Spread generously with the butter mixture.

Roll up (like a swiss roll), and chill for at least an hour.

Cut into slices 1cm thick…

Done!
